Ingredients:
- 1 1/2 pounds Butternut Squash
- 2 Tablespoon grape seed oil
- 1 teaspoon allspice
- 1/2 teaspoon sea salt
- 2 medium apples
- 2 Tablespoons raw agave syrup
Directions:
- Preheat your oven to 375 degrees.
Take your butternut squash and cut the bottom and top off from the squash. - Use a sharp vegetable peeler and peel the skin off.
- Slice the squash half and then scoop out all the seeds and pulp.
- Lay each half down flat and cut it into strips and then cut each strip into chunks.
- Oil the pan with grape seed oil and place the cubes inside it.
- Place 2 Tablespoons of oil into a small bowl and add in the allspice and sea salt.
- Stir the mixture well and then pour over the squash. to combine and pour it over the top of the squash.
- Cover the pan and bake for 20 minutes
- Chop 2 apples into 1/2 inch pieces.
- Place them in a small bowl and drizzle 1 Tb agave
- Carefully take the pan from the oven and unwrap it. Stir in the apple mixture and return the pan to the oven. Bake uncovered for an additional 15 minutes, or until the apples and butternut squash are tender.
- Serve immediately and enjoy!
